Ingredients

50g long grain white rice
1 ½ tbsp cornflour
4 cups cold milk
100g sugar
¾ cup almond meal
1 ½ citrus zest
2 tbsp chopped nuts
EQUIPMENT NEEDED:
Large bowl
Saucepan
Measuring equipment
Whisk
Preparation
In large bowl, mix rice and cornflour
Add ¼ cup of milk and sugar, stir
In a saucepan on medium high heat, add remaining milk, bring to a boil and add the cornflour paste just made.
Reduce heat whisking for 10-15 mins
Add almond meal and zest
Stir for 5 more mins
Place in cups and refrigerate until cool
